Burton Race will begin working with the Berkshire hotel from the 21st January 2011.
The chef has created a menu for the hotel's restaurant and dishes include; venison carpaccio with apricots and port wine jelly; pan fried bream with saffron and mussel broth; and saddle of lamb with smoked paprika crust served with herb jus, garnished with dried bean salad.
Burton Race said: "I am drawn back to this beautiful part of the UK by the lovely memories from living here for 14 years. Sanctum is a beautiful property and I feel my style of food will suit it perfectly."
Owned by Mark Fuller and Andy Taylor, Sanctum on the Green is just 40 minutes from central London.
Mark Fuller added: "John is an old friend and we are very excited about this new partnership. He is one of the finest chefs of his generation, and this new collaboration is sure to be the first of many."

Since when can anyone make it to Cookham in 40 minutes from central London? More like 90 mins if you're lucky... Believe this restaurant will struggle.

There are plenty of people in the surrounding area who will eat here.........People are prepared to travel to Bray for the Fat Duck and Waterside. Why will they not travel the extra 10 minutes to Cookham? Simple answer is, of course they will. Great pubs and perfect countryside all within a short journey from London. It will go from strength to strength.......
