The Devonshire Arms is a modern pub and restaurant, open for lunch and dinner seven days a week with a separate bar menu. A dining room will seat 70 people, with an additional 16 covers in the bar and room for 40 in the generous garden.
Its daily changing menu will deliver fresh, seasonal British cooking prepared by head chef David Philpot, whose previous experience includes Dean Street Townhouse and Le Caprice, New York.
Dishes are to include: Bar menu: Oysters; haggis & pork sausage roll; pork rilette, rhubarb chutney & crusty bread.
Starters: Roast rabbit loin, black pudding, smoked bacon & dandelion salad; farmhouse terrine, kumquat chutney & bread crisps.
Mains: Grilled plaice, béarnaise, blistered cherry tomatoes & new potatoes; braised breast of lamb, summer garden vegetables; fillets of Cornish mackerel, broad bean relish, pea shoots & salad.
Desserts: Hendrick's gin & tonic jelly, blueberry compote & Jersey cream; Chilled lemon soufflé, poached maple strawberries.
A good range of house ales will also be available including Harveys Sussex, Sambrook's Wandle, Windsor & Eton, 6X, Old Hooky and Shepherd Neame Masterbrew.
The front of house team will be led by Ryan Hayward. Shaun Clarkson ID has been commissioned to design the interiors.
