Roussillon the first UK restaurant to serve umami dishes

Roussillon in Pimlico is the first UK restaurant to serve up specifically designed umami combinations.

Patron chef Alexis Gauthier has created a selection of umani dishes, all designed to capture the essence of umami flavour. The Michelin-starred chef has chosen to offer an assortment of opt-in dishes rather then a complete umami menu.

 

The term 'umami' means 'deliciousness', and can be found in Japanese dishes and foods such as tomatoes, mushrooms, cheese and stocks.

 

An assortment of three starters and two mains are available alongside the a la carte menu.

 

Dishes on the menu include Green Asparagus rolled in Parmesan, Brown Butter & Chicken Jus, Pan-Fried Fillet of Daurade, Caramelised Shallots with Light Soy Sauce, Fish Reduction & Brown Butter, along with Egg & Parmesan Reggiano Custard, Spring Biannchetta Truffle & Veal Jus.

 

The 46-cover restaurant is also the first restaurant in Britain  to introduce – alongside its a la carte menu – seasonal garden menus which offers diners an experience where vegetables are the focus of the meal.
