Rotisserie puts chicken on show

Standex Food Service Equipment has supplied a BKI rotary oven to Cargill’s European meat business for roasting chicken fillets at food festivals and exhibitions.

Hereford based Cargill is one of the UK's leading suppliers of poultry products, working with independent butchers, multiple retailers and food service chains across the country. The company supports its local community by attending various local food festivals, where it uses the NMK rotisserie model for roasting chicken fillets for visitors to sample.

The BKI rotary oven is suited to Cargills's requirements in a number of ways; its compact size is ideal for limited space environments, whilst its large capacity cooking chamber facilitates swift and efficient roasting.

Once cooked, the chicken may be held at optimum temperature by switching the oven to a holding mode. User friendly, manual controls provide ease of operation. The oven's "plug and go" 13 Amp power supply ensures ease of installation and simple relocation of the equipment.

To meet Cargill's requirement to roast chicken fillets, the rotisserie was supplied with meat baskets rather than conventional skewers.

Cargill Meats Europe's Customer Service Manager, Liz Connors, confirmed that the NMK model is an ideal solution for the company's requirements: "The rotary oven's glass window and interior illumination ensure maximum visual impact and cooking theatre, which attract visitors to our stand. The stainless steel finish, removable centre shaft and slide out grease collection tray simplify cleaning at the end of a busy service."

Liz added: "We work closely with a number of major multiple retailers, who use BKI rotisseries for their food service operations. That represents a resounding endorsement of the equipment's reputation for quality and reliability. We had no hesitation in specifying the BKI rotary oven."

Cargill Meats Europe's Chef, George Rizzardini, reported that the rotisserie delivers consistently high standards of cooked food quality: "Customers frequently comment on our tender moist chicken and they love the tasty Hereford cider and Tewkesbury mustard marinade, with which we prepare the chicken fillets."
