Smyth said: "This a great alternative for regular customers looking for something a little different: the menu delivers fresh, clean and subtle flavours with all the finesse and flair that Restaurant Gordon Ramsay has come to be known for. It has also allowed me to be more playful without losing touch of the restaurant's classic French heritage."
Dishes from the menu include Caramelised aubergine with black pudding with Granny Smith apples, grelot onions, fresh almonds and green tomatoes.
Main courses include Poached Scottish lobster tail with lardo di colonnata, vegetables à la grecque and coral vinaigrette, and roasted saddle of rabbit with sage and Bayonne ham, trompette de la mort and stuffed Provençal vegetables.
Desserts include Peach Melba, Cherry soufflé with bitter chocolate sorbet, crystallised pistachio and mint.
The Seasonal Inspiration menu is only available at dinner and is priced at £95.00 per person.
