Rannoch Smokery

Rannoch Smokery, Scotland's specialist meat and game smoker, has unveiled its unique range of top quality, award winning smoked products.

Creating a major new profit opportunity for caterers, Rannoch's recognised quality, premium products comprise the Company's flagship smoked venison along with smoked pheasant, smoked lamb, smoked carpaccio, smoked goose, smoked duck and new pressed game terrine.

Rannoch's catering range comes in pre-sliced 250g skin-wrapped packs that lend themselves to portion control, ensure minimum wastage and are highly versatile. They are ready to serve and have a long natural shelf life with no additional preservatives.

All products are sourced from, where possible, sustainable Scottish sources and adhere to high standards of animal welfare. The range is constantly evolving and is supplied chilled to maintain quality. It will add value to chefs and caterers nationwide, for example, a starter of cold smoked venison with rocket and goats cheese with a menu price of £6.00 yields a gross profit margin of 75%. A menu price of £12.00 gives a profit of 87%. Unsliced product is also available to suit customer preference.

Rannoch can assist with recipe suggestions, provide bespoke presentations and pack according to a customer's requests. Orders are dispatched daily Monday-Thursday for delivery next day Tuesday–Friday. Selected chefs will be invited to Rannoch Smokery in order to witness the skill, dedication and craft behind the production of the range.

THE RANGE:

Smoked Wild Venison
Only the finest Wild Scottish Red Deer are used to create Rannoch Smokery's signature product. Prime haunch is cured using a secret recipe before being traditionally smoked over whisky-infused oak chips. Available either cold or roast smoked, this has been an award winner for many years.

Smoked Duck
Prime duck breasts, cured, delicately oak smoked and roasted.

Smoked Chicken
Prime chicken breasts cured in an infusion of herbs before being gently smoked and cooked.

Smoked Goose
A delicious product encompassing flavours such as sherry, ginger and garlic make this a distinctive product worth of its Great Taste Award.

Smoked Carpaccio
Scotch beef, slow cured, followed by distinctive whisky infused oak smoke – a classic product with real flavour and character.

Smoked Scotch Lamb
Gigots of Scotch lamb are cured in a blend of spices, herbs and lemon juice to produce a distinct and delicate product.
