Diners will be able to tuck into a platter of Wild Boar ham, Wild Boar mortadella, Gloucester old spot home cured ham and Millstone cheese; Panouzzi (flame-baked bread) topped with the likes of wild artichoke stem, buffalo mozzarella, rocket and sundried tomato and baked aubergines with single Estate organic tomato & mozzarella.
Great ingredients are central to the new Franco Manca menu, says the company. The organic tomatoes are single estate and imported directly from Italy; the organic cured chorizo hails from Brindisa while the mozzarella and ricotta come from Alham Wood Organics in Somerset. Even the pizza flour is sourced from the renowned Molino Caputo in Naples.
