Papillon

British designer Russell Sage explains how he has created a friendly, relaxed, but 'real' French restaurant at Papillon in Chelsea…

Background:
 
The Papillon French restaurant in Chelsea opened in April 2006. The eatery comprises a bar, restaurant and a private dining area.. The owner is Soren Jessen, who is also in charge of 1 Lombard Street restaurant and the Kilo Kitchen & Bar in Mayfair. Sommelier is Oliver Caisson.
 
Brief:
 
"Myself and the owner Soren Jeson had an informal chat about his vision for the premises. There was a real need for a friendly, relaxed, but very 'real' French restaurant in the Brompton Cross area.
 
Inspiration:
 
"I discussed my love of Balthazar at 80 Spring Street in New York. I loved the way it always feels exactly like the right time of day to visit, be it breakfast, lunch, dinner or late night, it always feels perfect. It also captures the spirit of French cuisine and blends it perfectly with New York customer services. We took this kind of versatile, hospitable atmosphere as our brief."
 
Solution:
 
"I was keen for the interior to have a glossy, reflective quality along with proper luxury.
 
"The walls and ceilings were painted a deep green which contrasted brilliantly with feature brass 'planking' on the back of the fitted seating and behind the small bar.
 
"We were fortunate to source beautiful antique reclamation ceiling lights which were hung low above the tables to create a dramatic and intimate effect throughout the restaurant. The pillars between the windows and a feature wall in a far corner were specially measured for deep level edged mirrors with feature green glass 'bolt' details which give the restaurant a wonderful glossy classic feel which works perfectly at any time of day.
 
"Finally, antique furniture was sourced and then hand painted and grained to give it a real French feel. I particularly like the authenticity of 'grained' wood when it begins to wear and look a little 'used'. It perfectly supports the worn in, much loved 'chabby chic' feel."

Sage continues: "I am still delighted with the interior at Papillon, 18 months on it looks better than ever, worn in and much loved."
