Papillon relaunches with new head chef and menu

Chelsea restaurant Papillon is relaunching this month with a new head chef and brasserie-style menu.

The new-look Papillon kitchen is led by Tom Hempstead (ex 1 Lombard street) and overseen by award winning chef Herbert Berger, who has held the role of chef-patron at sister restaurant 1 Lombard Street in the City for more than ten years.

Papillon's new menu features classic French brasserie cuisine from regional salads, including smoked duck breast, foie gras and gizzard confit salad with lardons, green beans and mushrooms from Perigord to lighter options such as a delicious home made Bouillabaisse and sole bonne femme.

In the evening guests can enjoy traditional dishes such as entrecote steak with bone marrow and red wine sauce or whole grilled line caught sea bass with fennel and Pernod.

Herbert Berger said: "The world of dining has changed in the three years since Papillon first opened its doors, and we are responding to popular demand in these new times. 

"Our regular Chelsea customers are looking for simple, classic French dishes with warm and friendly service.  Our change in menu and kitchen team reflects this, and our customers can look forward to excellent value for money and a relaxed brasserie to call their own."

Tom Hempstead, Papillon head chef, added: "I have spent the past five years cooking with Herbert, and the five before that living and working in France and Europe learning first hand the best French cooking techniques. Papillon is a wonderful location with a big group of fans, and I'm sure they will welcome our new brasserie style dishes."
