This is largely to do with maximising end profit in what are fast becoming hard times, as well as adapting to the increasing 'green' focus on saving energy in kitchens.
The new Protagonista 90 Series of gas and electric ovens and ranges from Mareno is the ultimate in high efficiency, energy saving cooking, impressively generating 40 per cent more output than its predecessors thanks to technological innovation.
With 18 ranges totalling 140 configurations in gas and electric models, all designed for safety and protection against water rating IPX5, the new series provides an unparalleled choice of equipment for today's catering facilities, large or small.
The perfect mix and match, compact line-up, the range includes gas and electric cookers, griddle plates, cupboard units, fry tops, bain marie, charcoal grills, induction and pasta cookers, boiling and tilting bratt pans and holding units - ideal for modular cooking.
Attention to detail
Technological advances mean its gas burners, from 1.6 to 6kW and from 2.5 to 10kW, are sealed tight to the top, with control knobs designed for protection rating XP5 against infiltration of water. Power from 24 to 40kW can be adjusted after cooker has been installed.
Tops come with 65mm deep spillage wells with a generous gap between burners for large pans, as well as optimised supports for pans as small as 100mm in diameter. Individual pan supports in "raaf" enamelled cast-iron are available in AISI 304 stainless steel rod.
The electric or gas fry tops with cooking plates also benefit from increased power up to 21 kW (+40 per cent). Smooth, mixed or grooved, horizontal or inclined, they are inserted into the worktop, ensuring uniform temperature and easy cleaning. In steel or with chromed finish, they have a fat run-off leading into a collection drawer with up to 2.5l capacity.
Designed for cooking meat, fish and vegetables, the Protagonista gas and electric griddles guarantee uniform cooking and high power up to 22 kW in gas and 15 kW in electric models.
The reversible chargrills, inclined for meat and horizontal for fish and vegetables, are made in cast iron with a grease trough with removable drawers for collecting fats or holding water, ensuring fast cooling of fats and tender cooking thanks to evaporation of the water.
Cooking and holding appliances feature solid tops in 30mm thick cast iron with rounded edges and satin-finish. This functional surface of 780x700mm is the same height as the open burner pan supports for safe movement of pans. Technological innovation also means chefs can work with different temperatures; 500°C in the centre and 200 °C towards the edges.
Made for limited energy consumption, these benefit from cast-iron hotplates (300x300mm with 4kw power), sealed tight to the pressed top with a heating control through a seven setting selector with relative 'power on' indicator light on control panel.
Each plate is fitted with an automatic reset safety thermostat which activates in case of incorrect use with unsuitable or empty pans with a flue for dispersing internal heat, designed for mounting the water column accessory.
With a sharp stainless steel appearance with no joints, just easy clean rounded edges, the Protagonista 90 Series is the ultimate hygienic solution for modern commercial kitchens.
