Salvo's Restaurant and Salumeria in Leeds, has created a 'coeliac safe' version of its national dish by using a Neapolitan style pizza base made from a wheat and gluten-free Pizza Base Mix by another Yorkshire business, speciality food company, Brazilian Flavours.
Other Italian restaurants, such as Fratelli's of Oxford and Adesso of Glasgow, have also picked up the challenge to make eating out less of a lottery for coeliac sufferers by using Brazilian Flavours' pizza base mix in their pizzas.
Gip Dammone, co-owner of Salvo's, said: "You have to be crazy to turn away coeliac customers. It is very important to us to source the best natural ingredients available to create all our dishes and now we are able to provide great tasting, gluten-free alternatives as well."
