Imperial offers frying perfection

Over half of meals consumed out of home are driven by enjoyment1, compared to only 7% driven by health2 and with fish and chip meals sitting as top choice for evening meals out of home3, fryers still have a large part to play in British kitchens.

"We haven't seen any downturn in the purchase of fryers, in fact just the opposite," says Mark Poultney, managing director for Imperial Catering Equipment.

"Since 2003 we've seen a year-on-year increase in frying unit sales."

The company, which offers a wide range of frying solutions including the highly-popular Elite range, believes that the two megatrends of convenience and indulgence will mean that fried food will always be on the menu for consumers. And creating great fried food starts with the right equipment.

On-Side for Caterers

Imperial Catering Equipment offers a large selection of high quality frying solutions from 14 to 41 litre capacity. Side Car and Space Saver filter systems are also available, offering a solution to every outlet's frying and filtering needs.

Electric Offering

Imperial has also recently introduced a range of electric fryers to its range (14 litre, 22 litre, 27 litre or 41 Litre Oil Capacity). Constructed in full stainless steel its features include a snap acting thermostat with a range from 93'c – 204'c, stainless steel frypot, front, sides, door, flue, basket hanger, fine mesh crumb screen, fry baskets (with ergonomic, polyurethane coated handles) and stainless steel legs with non marking feet.

The unique serpentine element design ensures quick heat-up and recovery of oil whilst the large 'cool zones' captures food particles to prevent them from carbonising during frying and tainting the oil.

Longer Oil Life

Imperial's Elite Fryer range uses a unique three-tube heating system that offers more British Thermal Units4 than any other fryer for greater efficiency and a better taste. The durable tube system has a bigger heating surface, heating the oil more quickly than traditional open pot designs and minimising costly oil usage. Less usage also means less absorption and a better tasting product.

Poultney adds: "Imperial Elite fryers are specifically designed to offer longer oil life and better tasting products. Not only do they offer a faster recovery, but a large 'cool zone' feature in each fryer ensures food particles are captured and prevented from carbonising in the fry zone. Combined with the high-BTU quick heating elements, this ensures a longer life for oil."

Open Pot Opportunities

Imperial Catering Equipment also offers a range of Open Pot Fryers, which give caterers the ultimate convenience with easy cleaning access to both the frying area and deep cold zone.

Poultney adds: "In addition to the same 'cool zone' feature for capturing food particles, our open pot fryers have a snap acting thermostat that offers a temperature range of between 93˚C to 204˚C and can help extend oil life, as well as producing a uniformly cooked product. Everything is designed with the convenience and requirements of caterers in mind to enable better tasting products and, with the right maintenance, a longer lasting fryer."

Filter for Profits

Effective filtering can have a massive impact on the life of a fryer and is essential to maintain safe frying and ensure the best possible quality of food.

Poultney adds: "Saving energy and costs both continue to be hot topics. Regular filtering can double the life of your oil and with Imperial it doesn't have to be a messy or time-consuming job. Imperial's Side Car Fryer/Filter system provides an effective built-in filtration system, stainless steel dump station and food warmer combined with the frying efficiency of the Imperial Elite 40 litre or 50 litre fryers - so there is no excuse not to filter regularly!

"It offers a five gallon per minute pump and internally plumbed oil drain, return lines and filter kit to give maximum oil efficiency with minimal operation and fuss.

"Our tube design fryers also increase oil temperature recovery, therefore using less energy to get the oil to temperature than conventional flat bed fryers."
