Essential 2009

Chefs will not only be able to choose Essential Cuisine at 3663 in 2009, they will have even more mouth watering aroma and great performance at their fingertips with new Light Vegetable, Roast Chicken and Cheese powdered stock mixes.

Three is undoubtedly the magic number as the tasty trio prepare to make their way into 3663, joined by the rest of the comprehensive range of professional stocks from Essential.

1. Light Vegetable perfectly answers consumer demand for healthier, lighter options such as pasta and fine soups, for example, leek and potato or fragrant Thai noodle, and is a delicate vegetable stock made with carrots, onions celery garlic and herbs.

2. Fantastically flavoursome, Essential's new roast chicken stock has all the characteristics of the roasting pan and is just right for all roasting recipes, jus and gravies. Why not try cooking up a Cream of Roast Chicken Soup?

3. Essential's third new addition is a strong and powerful cheddar cheese stock which can replace up to 75 per cent of cheese in a cheese sauce. Ideal for cheesy mash, classic cheese sauce, bread and batter mixes and risottos, it can also be added to flour dusting mixes for goujons and is delicious in vegetarian dishes.

Essential Cuisine managing director Nigel Crane, an experienced chef who himself spent years frustrated by the pre-prepared stocks on the market, said customers had been crying out for these three varieties to allow them to be even more versatile.

"The newcomers will make their debut in 3663 with many of our other superior products at the start of 2009," he said. "As with all of our stock mixes, the idea is to give chefs readymade stocks that actually mirror the quality of their own creations. They can be tweaked to suit, have a clean taste, are not over seasoned and are incredibly easy to use.

"Unlike many manufactured stocks, they have not been developed by a technical team with the manufacturing process in mind. The Essential approach is a chef's approach, striving to produce a stock as close to kitchen-made as possible."

From January, 3663 will also stock Essential Cuisine Premier Veal Jus, Premier Lamb Jus, No1 Beef Gravy and No1 Chicken Gravy with two pots in each case.
