Opening in early September 2011, the launch of the 1950's style American Diner is the seventh in the group and the first to open in Wales.
The establishment will feature 70 internal covers across 1,650 square feet and the seating will be arranged in booth, table and counter-top formations.
Classic dishes will be served including a range of hamburgers, hot dogs, loaded fries, a selection of American style desserts and milkshakes.
Ed's Easy Diner Cardiff will be open from 11am to 10pm Sunday to Thursday, 11am to 11pm on Friday and Saturday.
Andrew Guy, operations director of Ed's Easy Diner, said: "We are delighted to be opening in Cardiff's magnificent St David's Shopping Centre, our first diner in Wales and outside of the south east of England.
"The city's already burgeoning culinary scene and an ever increasing public demand for a quality fast-casual dining experience, means this an exciting task and a challenge we both relish and respect."
