EBLEX launches lamb cutting guide for caterers

The cutting of a lamb carcase for the Halal market differs slightly from traditional English butchery techniques. EBLEX master butcher Dick van Leeuwen has teamed up with Halal butcher Riyad Al-Hassan to produce a specialist Cutting Guide to address the specific needs of that market.

The Lamb Cutting Guide and Carcase Poster for the Halal Market was developed as a training tool for the meat processing sector and to provide a single comprehensive specification to ensure consistency throughout the entire Halal industry.

The new guide is also an ideal tool for foodservice operators who are catering for the Halal market as the specifications can be shared with suppliers, helping to further ensure the meat they receive has been handled according to the specific techniques.

The guide contains step-by-step instructions demonstrating how to cut each different section of the carcase using butchery methods used in the Halal sector. Translation sheets in Urdu, Bengali (Bengla) and Arabic are also available.

What's more, included with the guide is a CD containing over 100 lamb cutting specifications utilising the whole lamb carcase including offal. A Meat Purchasing guide for the end user can also be found on the CD. When used in conjunction with the cutting guide, processors, retailers and caterers are provided with a unique model enabling them to make the most of the trade's only comprehensive meat specification and coding system for meat available in the market place today.

EBLEX master butcher, Dick van Leeuwen said: "There was a definite need in the market for a clear and concise reference point for all those producing, butchering and purchasing Halal meat. Together, Riyad and I have produced a lamb cutting guide which will help specialist Halal suppliers develop their business and market opportunities while bringing clarity and consistency to this market."

EBLEX advises retail and catering butchers to use quality assured beef or lamb which has been approved by EBLEX's own Quality Standard scheme or by Assured Food Standard's Red Tractor scheme.
