Chef Richard Corrigan is ahead of the Game

6th August 2010, 8:42am

Renowned chef Richard Corrigan is launching a tailor made hunter's menu using pre-hung game to kick start the game season.

Diners at his restaurant Corrigan's Mayfair will be able to indulge in his Grouse Pie which features grouse, duck fat, savoy cabbage, foie gras and thyme.

Corrigan said: "Quite rightly it's increasingly seen as a healthy alternative to commercially reared animals…and quite impossible to clone!"

The game at Corrigan's has been carefully sourced from Reggie Johnson's Farms in Lancashire, a beautiful spot well known for the quality of the rare-breed meat raised and hunted there.
