The venture, which was originally The Midland Grand Hotel, will be open seven days a week for breakfast, lunch, dinner and drinks and it will see Wareing take on the role of restaurant operator. The team at the site will be led by his protégé, Chantelle Nicholson, who will be the general manager.
The establishment will occupy the original entrance hall and coffee room of the hotel and will pay tribute to the creativity of the building's original architect, Sir George Gilbert Scott.
Wareing said: "My introduction to St Pancras came at just the right time. The minute I set foot in the building I just knew it was for me; the building is breathtaking and has an amazing sense of time and place that I knew I had to be a part of.
"I always wanted my second restaurant to be in a landmark location and thanks to Harry and the team at Manhattan Loft Corporation I am now part of one of London's most iconic buildings.
"This is not another Marcus Wareing at the Berkeley, there can only be one. It is a very different venture and one that is immensely exciting, it will be the perfect complement to Marcus Wareing at The Berkeley. This project is a huge move for me and I could not have even considered it without a strong and loyal team behind me.
"I am thrilled to offer the management platform to Chantelle, I know that together we will continue to lead in excellence and offer a memorable experience to everyone who visits us."
Harry Handelsman, owner of St Pancras Renaissance Hotel and chief executive officer of Manhattan Loft Corporation, added: "I'm delighted that Marcus, Britain's most accomplished restaurateur, has chosen to open his new restaurant in the hotel under the leadership of his protégée, Chantelle Nicholson.
"With this endorsement and the splendour of the restored St Pancras Renaissance Hotel to its former glory alongside Chantelle's experience and commitment to quality, London will experience the most exciting event on the hospitality scene in 2011."
Wareing is best known for his two Michelin starred restaurant, Marcus Wareing at The Berkeley, Knightsbridge, London – voted Best Overall Restaurant in the 2011 Harden's Restaurant Guide and most recently 3rd in the UK in the Sunday Times Food List 2010.
