Nick Nairn
Nairn is also working with the hotel as a consultant on its entire food and beverage suite, including in-room dining menus, Scottish breakfasts, weddings, conferences and banqueting; providing guests with award-winning cuisine, throughout their stay.
Nick Nairn has had an illustrious career to date, running his successful cook school in Stirling, and makes regular appearances on shows including BBC One's Saturday Kitchen and BBC Two's Great British Menu. The Kailyard will be Nairn's first restaurant to open since he ran the Braeval near Aberfoyle and Nairn's in Glasgow.
Nairn said: "Being a local lad I have grown up visiting the hotel for various events over the years and am delighted that this iconic hotel has been refurbished to reflect its true glory. I've been approached by several companies in the past to open restaurants but none grabbed my interest in the way Doubletree by Hilton Dunblane Hydro did."
The Kailyard menu will feature dishes using the best Scottish produce wherever possible and will include Borders lamb, Shetland Sole, Highland beef and Scrabster-landed cod.
