Almost 60 competitions will take place across the three day event, including 12 new classes for the Live Theatre and Salon Display.
Live Theatre, sponsored by Compass Group UK, will see the introduction of three brand new classes: Elior Apprentice Skills Challenge, Lexington Food Service Challenge and Vegan Dish Challenge sponsored by The Vegan Society, which aims to reward the popularity of vegan menus.
Also new to the hospitality schedule is Schwartz Chef Flavour Pairing Challenge and Sodexo Chef of the Year. In addition, the Live Theatre will showcase the Sustainable Fish Dish sponsored by M&J Seafood and Alaska Seafood Challenge.
Meanwhile the Salon Display, also sponsored by Compass Group UK, hosts Junior and Senior programmes and introduces new classes such as Miniature Decorative Exhibit, Bread Display, Restaurant Plates Fish Course, Sculpted Novelty Cake and Pastillage Mask.
Peter Griffiths MBE, Salon Director, said: "Salon Culinaire continues to go from strength to strength in terms of the standards set and the support it receives from industry. Competitions help competitors to raise their game, offer healthy rivalry, cultivate friendships and set benchmarks.
