Previously head chef at Chapter One, Donovan has been working with renowned chef Andrew McLeish, where he helped retain the restaurant's Michelin Star and four AA rosettes.
Prior to Chapter One, Donovan has worked at the Greenhouse, Aubergine, The Royal Garden Hotel and The Grand Hotel, Brighton.
Donovan oversees the 120-capacity Brasserie Bar, the Deli and Sky Bar, as well as servicing meetings and function space for up to 100. Aviator general manager Michael Helling said: "Andrew brings with him the ideal mix of ambition, foresight and creativity. He is the perfect chef to take the cuisine at Aviator to the next level.
"This is a very exciting time for us - we passionately believe that excellence can be delivered with value for money and Andrew's food is for those guests who appreciate quality and style without paying premium London prices."
