He joins the City favourite from Orrery, where he was Restaurant Manager, and has previously held management and sommelier roles at highly prestigious restaurants including L'Etranger and Gordon Ramsay at Claridges.
Scottish-born Matthew grew up on a small farm, surrounded by good food, skilfully prepared by his half-Italian mother. He knew exactly what he wanted to do from a young age, and took a BA in Hospitality Management at the University of Glasgow.
He won the UK Young Waiter of the Year in 2007. He was awarded two 'goblets' in Wine Spectator; his wine list was ranked 11th in the world, and he won the AA award in 2009 for Restaurant Manager.
Matthew has a similar approach to food, wine and hospitality as Chef-Partner of 1 Lombard Street Herbert Berger, which will make them a formidable team: "It's essential that you have a real understanding of your customers and their needs, continually offering good value, professional and relaxed service, and demonstrate respect for their knowledge of food and wine," said Matthew.
"I love the purity of Herbert's dishes, and his commitment to seasonality and simplicity.
"I also want to continue 1 Lombard Street's pledge to sell top wines at really competitive prices, and to ensuring we have a wide selection of wines available by the carafe and glass. Unusually for the City, the more expensive the wine, the smaller our margin, and I like to see our clients drinking little, but well, as a result.
